Hopin Jack is a traditional Southern dish served in the United States on New Year's Eve. It is said that the consumption of black eye beans brings good luck.

Required products :

  • 6 thin slices of bacon, finely chopped
  • 4 stalks of celery, cut
  • 1 medium onion, finely chopped
  • 1 small green pepper, finely chopped
  • 3 finely chopped garlic cloves
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 teaspoons salt
  • 8 teaspoons chicken broth
  • 4 tea cups black eye beans
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons rice
  • green onions for serving

Method of preparation :

Fry the bacon in a pan until crispy - about 10 minutes.

Add celery, onion, pepper, garlic, thyme, black pepper and 1 tablespoon of salt. Stir and fry for 8 minutes until the onion is soft. Add the beans and broth, cook for 40 minutes until the beans are ready. Drain through a colander, preserving the liquid in which you boiled it.

Return it to the pan, add 1 cup of the broth, cover with a lid and set aside.

Heat the olive oil in a saucepan. Add the rice and stir. When it becomes transparent, put 3 cups of broth and salt. Boil the rice until ready, about 15-18 minutes. Stir with a fork and pour over the beans in a saucepan. Pour the remaining broth into the dish in portions (about 1/4 cup of tea) to absorb the liquid from the rice.

Serve the dish generously sprinkled with green onions.
