For the dumplings:
Turn the oven to 150 degrees.
Roll the meat in flour and fry in a pan until browned (work in portions). Transfer to a plate and fry the bacon, onion and garlic in the same pan until golden. Add herbs and spices, stir. Return the meat to the pan, pour 300 milliliters of water, add the wine, tomato paste, salt and sugar. Mix well and scrape off all the burnt pieces on the bottom (this will give extra flavor to the dish).
Cover and transfer to the oven to bake for 3 hours until the meat is cooked - if you do not have a suitable pot, pour into a pan and cover with foil.
Prepare the dumplings - cut the bread into small pieces. Add the parsley. Bring the milk to a boil and then pour it over the bread. Leave for 15 minutes under a lid.
Season the soaked bread bites with nutmeg, pepper, and salt. Add the egg and stir. If the dough is very liquid, add a spoonful of flour. With wet hands, form small balls.
About 20 minutes before the 3 hours of baking, put the mushrooms in the pan, season to taste with salt and bake.
Meanwhile, put butter in a large pan and fry the dumplings in it until golden.
Garnish the stew with parsley and serve with dumplings.
