Method of preparation:
Preheat oven to 200 degrees. Prepare a tray and cover it with a sheet of parchment. Top with potatoes, peppers, onions, garlic, season with salt, pepper and olive oil.
Bake the vegetables until ready and put them in a blender while still warm.
Pour the broth, add the red pepper and puree until smooth. Pour and heat the mixture in a saucepan, pour 2-3 tablespoons of coconut milk, simmer on low heat and stir.
Divide portions, garnish with chopped onions, season with paprika and serve.
