Required products :
120 grams butter
120 grams flour
400 milliliters fresh milk
5 eggs
200 grams carrots
100 grams peas
100 grams spinach
100 grams cauliflower
salt
nutmeg
ground black pepper
breadcrumbs
oil
parsley
slices tomatoes for decoration
Method of preparation :
Heat the butter, add the flour, pour in the milk and boil a thick dough to separate from the walls of the bowl.
When cool, add the egg yolks, salt and stir.
Beat the egg whites to a froth, combine them with the dough and divide into three parts.
To one part add chopped parsley and carrots with peas, which you have previously stewed in fat. Add spinach and ground black pepper to the second, and boiled and chopped cauliflower, grated nutmeg to the third.
Then put them in suitable forms, which you have previously greased with oil and sprinkled with breadcrumbs. Arrange one layer of the different dough, each layer occupying 2/3 of the volume of the vessel.
Arrange the bowls in a large enough container with water, the level of which should reach 1/3 of the height of the forms.
Close the pan with a lid and let the pudding cook for 20 minutes after the water boils.
Turn the finished vegetable temptation on suitable plates and decorate with sliced tomatoes.
