Learn how to cook "Vegetable salad with quinoa, raisins and almonds". Delicious recipe.
Required products :
400 grams of quinoa
100 grams of almonds
1 large cucumber
250 grams of cherry tomatoes
100 grams of soft raisins
8-10 sprigs of green onion
leaves of 7-9 sprigs of mint
lime or lemon juice
olive oil
salt and ground black pepper
Method of preparation :
Wash the quinoa and cook until ready according to the instructions on the package. Allow to cool.
Cut the almonds and bake them in a dry pan for 2 minutes.
Peel a cucumber and cut it in half lengthwise. Clean the seeds using a spoon and cut the rest into small pieces.
Cut the cherry tomatoes in half, the onion and the mint leaves into small pieces.
In a salad bowl, mix all the prepared products, add the raisins and season with salt, ground pepper, olive oil and lime juice to taste.
Leave the salad to stand for a while to absorb all the flavors and aromas. Then sprinkle with mint leaves and serve.
