Required products :

1 onion
1 carrot
3 tablespoons olive oil
1 stalk celery
1 clove garlic
1 potato
6 teaspoons vegetable broth
2 tablespoons finely chopped fresh parsley
400 grams canned white beans
250 grams spinach (can be frozen)
1/2 teaspoon canned peas desire
salt and ground black pepper

Method of preparation :

Peel and wash the vegetables. Cut onions, carrots and celery into small cubes, potatoes - into medium ones, and crush the garlic.

Squeeze the liquid from the canned beans, rinse the beans with clean water.

If you use frozen spinach, defrost it and dry it.

Heat 2 tablespoons of olive oil in a large saucepan, put onions, carrots, celery and fry for 5 minutes. Stir periodically.

Then add the garlic, potatoes, and a minute later pour the broth. Add parsley and once the liquid boils, reduce the heat to medium. Allow the soup to simmer for 15 minutes

Then add beans, peas, spinach, season with salt and ground black pepper to taste and cook for another 5 minutes.

Remove the prepared soup from the heat and pour the remaining spoon of olive oil. Stir and serve with croutons.
