Creamy, fragrant and nutritious white soup or also known as chicken soup with coconut milk. It contains countless useful nutrients, and thanks to the delicious mushrooms, the soup provides even more protein. With pleasant citrus notes of lemongrass and a light hot touch of ginger, this white soup will definitely become one of your favorite recipes.

Peel the mushrooms, cut them together with the onion, pepper and chicken fillet.
Put them in a saucepan and pour the coconut milk. Season with lemon juice, salt and pepper to taste. Add the grated ginger, lime juice and sugar.
Let the soup simmer on low heat for an hour. Cool, pour into bowls and serve the white soup, garnished with chopped fresh coriander and lemongrass.
Advices:
Prepare the soup to your liking by replacing or removing any of the ingredients. If you don't like mushrooms, replace them with cheese or chickpeas to get enough protein.
