Necessary products:

  • 2 eggs
  • 3/4 cup skim milk
  • 1/4 cup coconut oil or olive oil
  • 1/4 cup unsweetened apple puree
  • 1 teaspoon vanilla extract
  • 1 cup wholemeal flour
  • 1/2 cup flaxseed flour
  • 1/4 cup wheat germ
  • 1/4 cup flour universally
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt

Method of preparation:

In a large bowl, beat together the eggs, milk, coconut oil, apple sauce and vanilla. Add the wholemeal flour, flaxseed flour, wheat germ, all-purpose flour, baking powder, sugar and salt to the mixture and stir until the mixture is smooth.

Heat the waffle maker and grease with coconut oil or other fat of your choice. Pour some of the mixture into the waffle iron and bake until crispy and golden brown. Repeat until the dough is done.

Serve with fresh fruits such as strawberries, blueberries or others. You can crush walnuts, almonds or other nuts. Wholemeal waffles go well with honey or maple syrup.
