Required products :

250 g wholemeal flour
250 g wheat flour
3 tablespoons of wheat bran
250 milliliters of water
100 milliliters of freshly squeezed orange juice
1 teaspoon salt
1 tablespoon of honey
1.5 teaspoon dry yeast
3 tablespoons sesame seeds or quinoa
3 tablespoons linseed
120 -130 grams of muesli

Method of preparation :

Roast the bran and muesli in a dry pan, then allow to cool. Mix honey dissolved in warm water with orange juice. Add the yeast and sifted flour, salt, seeds and knead the dough. Leave for 30 minutes in a working oven, then remove and place on a board sprinkled with plenty of muesli and some seeds. Spread the dough the size of the board and sprinkle with the remaining muesli.
Fold the four ends towards the middle, then do this once more with the new 4 ends that are obtained, turn and shape the bread, giving it a round or elongated shape.
Place in a pan whose bottom you have covered with baking paper and place in a warm oven for 30 minutes to rise. Then remove and let the dough stand for another 15 minutes at room temperature.
Use these 15 minutes to heat a pan with a lid in the oven at a temperature of 240 degrees.
Transfer the dough together with the baking paper to the hot pan, close with the lid and bake for 30 minutes at 240 degrees. Then remove the lid, reduce the temperature to 225 and leave in the oven for another 15 minutes.
