Mix all spices without ginger (including salt) and crush them.
Cut the cheese into oblong pieces (2-3 cm long) and roll in flour.
Heat half the butter in a pan and quickly fry the cheese in it until golden (on all sides). Remove on paper.
Wash the spinach, dry it and cut the leaves (remove the stems and rough parts). Then stew in the pan in which you fried the cheese, on low heat under a lid for about 3 minutes.
Remove the softened leaves and chop them finely. Do not use the juice released in the pan. An option is to grind until smooth in a blender.
Peel a stalk of ginger and grate it. Fry for 30 seconds in the remaining hot oil (use a thick-bottomed pan), add the spice mixture and after another 30 seconds (stirring constantly to separate the aroma) add the spinach and yoghurt (if you don't want the dish to be sour) flavor, replace the milk with sour cream with a fat content of 10-15%).
If the sauce is too thick, pour the liquid left in the pot when stewing the leaves.
Add salt to taste and simmer for 2-3 minutes on low heat. Then put the pieces of cheese in the sauce, stir, warm a little and serve the dish with fresh bread (cold is also delicious).
