Required products :

4 - 5 medium potatoes

3 medium zucchini

1 large onion

1 - 2 carrots

2 tablespoons vegetable oil

200 milliliters of water or vegetable broth

2 bay leaves

parsley to taste

salt to taste

ground red pepper to taste

 

Method of preparation :

Wash and peel the zucchini and potatoes, cut them into cubes.

Peel an onion and cut it into as thin circles as possible, grate the carrots and fry them together in the hot fat.

When the onion acquires a golden color, add the zucchini and potatoes, pour the water or broth. Add the bay leaves and salt to taste.

Allow the vegetable mixture to simmer over low heat until the products are ready.

Serve the ragout sprinkled with chopped fresh parsley and paprika.
