Required products :

  • 4 medium zucchini, cut lengthwise
  • 2 teaspoons olive oil
  • 1 carrot, finely chopped
  • 1 pepper of your choice, finely chopped
  • 1/2 cup cherry tomatoes in quarters
  • 500 grams of chicken breast, finely chopped
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • pinch of hot pepper flakes
  • 3 tablespoons finely chopped chives

for the tarator:

  • 1/2 tea cup of kefir to drink
  • 2 teaspoons lemon juice
  • 1/3 tea cup finely chopped mint leaves
  • 1/4 diced cucumber

Method of preparation :

Use a spoon to carve part of the inside of the zucchini to form enough space to fill later. Grease the boats with olive oil and bake with the cut side down for 6 minutes at 220 degrees.

In a large deep frying pan, heat 2 tablespoons of olive oil and fry the carrots, peppers, tomatoes and finely chopped zucchini inside. Cook for 5 minutes until the vegetables are soft.

Season the meat with smoked and hot pepper, oregano and a pinch of salt. Put in the pan with the vegetables and fry briefly until the chicken is white. Remove from the heat and add the green onions.

Turn the zucchini over and fill them with the vegetable-meat mixture. Bake for 8-10 minutes until desired.

Meanwhile, season the kefir with lemon juice, add the mint and cucumber, season and serve the zucchini tarator.
