Learn how to cook "Zucchini cake with goat cheese and sun-dried tomatoes". Delicious recipe.
Required products :
250 grams of zucchini
80 milliliters of olive oil + a little spread on the form
180 grams of wheat flour
100 grams of wholemeal flour
3 eggs
80 milliliters of milk
80 grams of dried tomatoes
100 grams of goat cheese
1 clove of garlic
10 grams of baking powder
salt and ground black pepper to taste
fresh thyme taste
Method of preparation :
Grate the zucchini with a coarse grater, add 1 teaspoon of salt and stir. Leave them for a few minutes to release the juice, then drain thoroughly.
Mix the two types of flour, add baking powder, salt and ground black pepper to taste, finely chopped garlic clove.
In a separate bowl, lightly beat the eggs, pour in the milk, olive oil and beat once more.
Mix the dry and liquid parts, kneading the dough with a spatula.
Break the cheese into medium pieces. Place the sun-dried tomatoes on paper, if they have been in the fat, so that it can absorb the paper, and then cut them into small strips. Add the cheese, tomatoes and thyme to the cake batter and mix thoroughly. Drain the grated zucchini once more and then add them to the other products. Stir quickly.
Distribute the resulting mixture in a greased form, pour a little olive oil and sprinkle with salt on the surface.
Bake the cake in a preheated 180 degree oven for about 45 minutes. Check readiness with a toothpick.
