How To Cook Zucchini Spaghetti With Chicken And Cauliflower Sauce - Recipe

Required products :

  • 6 teaspoons oil
  • 1 cup finely chopped onion
  • 1 teaspoon chopped garlic
  • 340 grams of grated cauliflower
  • 3/4 teaspoon cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 500 grams of chicken breasts cut into chunks
  • 1 1/2 teaspoon homemade Italian spice
  • 3 zucchini
  • 1 tablespoon parsley

Method of preparation :

First, cut the zucchini with a spiral or use a peeler to shape them like spaghetti. Drain them of excess water - for this purpose, salt them and wait 20 minutes, then strain through a cotton cloth.

Heat 2 teaspoons of oil in a pan and fry the onion and garlic for 5 minutes. Add the cauliflower and cover, cook for 8 minutes, stirring occasionally. When the vegetables are soft, transfer them to a blender. Add the cream and puree until smooth. You should add parmesan and puree again.

Heat 2 tablespoons of fat in a pan and fry the meat, seasoned with 1/2 teaspoon of Italian spice and salt.

Once the meat is ready, you should fry the zucchini in the remaining oil, season with the Italian mix. Cook for about 3-4 minutes, until slightly softened, but still fresh and crispy. Drain them in a colander (although there is no added water during cooking, they will release one), pressing them lightly with a spatula to get the most liquid out of them.

Put the cauliflower sauce and meat in the pan and wait for them to warm up. Add the zucchini, stir and serve after a minute.

Sprinkle with parsley.
