Required products :

  • 1 tablespoon olive oil
  • 1 large zucchini, grated
  • 1 teaspoon hot paste Harissa
  • 4 eggs
  • 3 tablespoons chickpea hummus
  • 1 large roasted red pepper from a jar, cut into strips
  • 3 olives, chopped
  • handful of fresh coriander (or parsley)

Method of preparation :

Heat olive oil and fry the zucchini, stirring occasionally until soft.

Mix the eggs with the hot Harissa paste and pour into the pan. Cook until ready on one side and turn to bake on the other.

Spread the zucchini tortilla with chickpea hummus, season with black pepper and garnish with olives and fresh coriander (or parsley).

Cut into 4 pieces and serve the tortilla hot or cold. In both cases you will be served a delicious meal.
