We are used to the fact that zucchini is most often pickled for the winter. It is very convenient to open a jar of such zucchini in winter and serve with mashed potatoes, buckwheat, pasta. There are a huge number of recipes for marinating zucchini for the winter.
But, very tasty pickled zucchini can be obtained both in summer and autumn, using the express method of marinating young zucchini with salad. After 1.5-2 hours the whole family will be able to enjoy such zucchini. I suggest using this recipe for this.

Step 1
For work, we need young zucchini - 700 grams, salt - 0.75 tbsp. l., honey - 2 tbsp. l., olive oil - 70 ml, garlic - 5 cloves, paprika - 0.3 tsp, ground coriander - 0.5 tsp, vinegar - 35 ml, parsley 0.3 bunch, bowl, knife, cutting board.
Step 2
Wash and peel the zucchini.
Step 3
Cut the zucchini into 0.5 cm thick rings.
Step 4
Put in a bowl, sprinkle with salt, mix and leave for 20 minutes. Drain the separated juice.
Step 5
For the marinade, combine oil, vinegar, honey, coriander, paprika and finely chopped garlic.
Step 6
Combine zucchini, finely chopped parsley, marinade. Send to the refrigerator for 1.5-2 hours. Stir the zucchini occasionally to marinate evenly.
Step 7
Marinated zucchini is ready.
