Fruit and vegetable juices are a huge complex of vitamins, trace elements, sugars and other useful substances for humans. In addition to being delicious and healthy, these drinks are easily absorbed by the body. Of course, fresh versions are preferable to canned ones, but subject to certain rules of preparation and storage, bottled juices also retain many valuable ingredients. This way you will be able to consume during the winter, when the choice of fruits and vegetables is smaller than in the summer.
You can make juice from almost all fruits, vegetables and spices with the help of modern appliances, extracting maximum amounts of liquid from the plants and from their soft inside, which is also a real storehouse of vitamins.
1. Choose well-ripened and healthy fruits and vegetables.
2. Wash the products, clean them of tails, handles, stems and other unnecessary parts. Dry. Cut larger fruits into pieces, so it will be easier to separate their juice.
3. Do not rush to dispose of the soft inside that remains. You can pour boiling water over it, leave it for a while and then strain it. Use to make pickles, purees or jellies, for example.
We all know that fresh juices are not long-lasting and should be consumed within an hour of preparation. It is necessary to store in dry containers in cool and dry places. The most suitable for use are glass bottles and jars with a volume of 0.300 to 1.0 liters with screw caps.
The canning of fresh juices must be done quickly because through their contact with the air microorganisms can get into them, the drink can be of poor quality, and under unfavorable conditions it will ferment quickly.
1. If you prefer or need to, filter the squeezed juice through several layers of gauze or use a thick cloth.
2. Preheat the drink to 90 degrees and pour into the prepared containers.
3. The third step is to close with screw caps and turn the jars upside down until their contents have cooled completely. If you use bottles, set them aside until cool.
This technology requires each stage to be performed immediately after the previous one:
1. Heat some juice.
2. Pour into a bowl.
3. Pasteurize at a temperature of 90 degrees, for example, by placing the jar or bottle in a pot of water that you have placed on the stove.
For containers with a volume of 1 liter, the time required is about 25 minutes, and for larger - the minutes to increase proportionally.
You can use the latest technology by adding sweet crystals at the time of heating or before pasteurization.
The finished product is best stored in a dark dry and cool place.
