You can make a cake much more tender, juicier and tastier by properly soaking the cakes. This is especially true for shortbread cakes and biscuit cakes prepared according to the classic recipe (which do not include fat-based ingredients: butter, sour cream, cream).

Impregnation for homemade biscuits will not be superfluous, since when they are baked, a dense crust can form on the surface. If this crust is pre-moistened with impregnation, then it becomes softer and it will be better to absorb the cream. When impregnating cakes, take into account the following nuances:

- Impregnation can be sugar syrup, sweet tea with lemon or strong coffee with cognac, berry or fruit compote, light syrup that remains when canning fruits, yogurt;

- for a biscuit made from 3 eggs, 150 ml of impregnation will be enough;

- it is best to impregnate the cakes with a culinary brush, passing it several times over the entire surface of the cake;

- if you do not have such a brush - soak the biscuit cakes with a spoon, picking up an incomplete spoonful of syrup each time for uniform seepage;

- if you baked a high biscuit, then it is best to cut it into 2-3 cakes and soak each cake separately. Then the whole cake will be juicy both on top and inside;

- when impregnating, pay special attention to the edge of the cakes, as they have a dense outer crust.
