But if the usual options no longer inspire, pay attention to healthy vegetable salads without mayonnaise. After all, a vitamin salad of fresh vegetables with a light dressing will bring the desired variety to the menu and will surely please guests. It only takes a few minutes to prepare and can be served immediately. Incredibly fast and convenient!

 

This dish is based on juicy vegetables, supplemented with olives, garlic and sesame, which gives the appetizer a unique piquant taste.

To prepare a healthy vegetable salad with olives and sesame seeds, you will need:

3 tomatoes, 2 bell peppers, onion, 100-150 g olives (olives), 4 tbsp. l. olive oil, 1 tbsp. l. vinegar (wine or apple), 1 tsp. lemon juice, 1 tsp. sesame seeds, garlic clove, fresh parsley (or dill) to taste, spices, Provence herbs to taste, salt to taste.

 

Rinse vegetables and fresh herbs, peel onions and garlic. Cut the tomatoes and peppers into arbitrary medium-sized pieces, onions into half rings, and finely chop the greens with a knife.

Put the vegetables in a deep salad bowl and start dressing.

To do this, in a separate bowl, combine lemon juice, olive oil, vinegar, chopped garlic, salt and spices.

 

Pour the dressing into a salad bowl with vegetables, add sesame seeds (you can lightly brown in a dry frying pan beforehand) and olives. Mix the ingredients and serve, garnishing the dish with a sprig of fresh herbs.

And if you wish, you can add 150-200 g of soft pickled cheese (feta, cheese) and canned sweet corn to this dish. Get a truly festive option.

 

Also try replacing the parsley with fresh lettuce and adding a teaspoon of fragrant honey to the dressing. As a result, a slightly different salad will come out - "Mediterranean" with a stunning contrasting taste.

And if you want to add a fresh touch to the taste of this salad, you can replace sweet peppers with juicy crispy cucumbers. And, of course, you can not add sesame seeds.
