1. Prepare real coffee in a copper pot! In the homeland of this dish, in Turkey, it is called cezva, where everyone knows that it is copper that retains heat for a long time and makes the taste of coffee especially deep.
2. The cezve should be small, for several small portions, and with a narrow neck. So the aroma is better preserved, and it is simply impossible to make a lot of delicious coffee at a time. This "ritual" requires patience. Arabs prepare coffee by burying a vessel in heated sand. It is believed that this is how it acquires density and a special color.
3. You need to brew coffee on a very low heat. Yes, you will have to wait, not looking up, for several minutes. But after all, when you create magic, you can slow down your rhythm of life a little.
4. Good coffee needs good water. Suitable filtered or bottled. But if you have access to spring sources, that's even better. The main thing is that the water from them is soft, without salts and iodine.
5. Coffee should be finely ground. You need to fill it with exclusively cold water, you cannot boil water in a kettle in advance. Then put the cezve on the fire. Once the coffee is well heated, stir just once.
6. When the foam on the coffee darkened and the first bubbles began to appear on the surface, remove from heat. In no case should the coffee boil, it completely kills the taste. The French call boiled coffee dead. But the drink will acquire a particularly viscous and dense structure if it is heated three times. Moreover, sugar, if you are preparing sweet coffee, will melt a little and give it a caramel aftertaste.
7. Coffee lovers know that when pouring it into cups, you should save the foam. In Arabia, she is called the face of this drink. And they are right, because it is the foam that is mostly “responsible” for the aroma, and purely aesthetically gives the coffee a special appeal.
8. If you drink coffee with sugar, then add sugar not to the finished drink, but to the ground grains, and only then start cooking.
9. Coffee is open to any experiments. During the brewing process, when the drink has already warmed up, various spices can be added to it. Ginger, cardamom, cinnamon, cocoa, vanilla, hazelnuts, nutmeg, cloves, grated chocolate, salt and hot pepper are suitable as additives. The main thing is not to pour too much. Slices of lemon, orange, a few drops of alcohol will add a new touch to the taste. Try and choose what you like best.
10. If you want the taste of coffee to be mild, then during the heating process, add a small piece of butter (a quarter of a teaspoon or 5-7 g).
