Preservatives. What would we do without these miracle substances! Today, when milk can be stored for several weeks, and mayonnaise for several months, you understand how strongly preservatives have entered the food industry.

Thanks to preservatives, bacteria and fungi do not grow in food products for a long time, and all the taste qualities of the product will be preserved. Unfortunately, such "miracles" cost our health dearly. Frequent use of products rich in preservatives harms our health. Scientists assure that such substances can cause the development of allergies, inflammatory processes in the digestive organs and even contribute to cancer. Natural preservatives, which have been known since time immemorial, are much safer.

Salt is the oldest preservative

Salt is not only an excellent preservative, but also a flavor enhancer. Pathogenic microorganisms, being in a saturated salt solution, simply die. Salt helps extend the shelf life of vegetables, mushrooms, meat and fish. Almost all types of bacteria, even staphylococci, die in a 20% salt solution.

Vinegar

Few marinades for canning can do without vinegar. Acetic acid is able to stop fermentation processes, thereby preserving all the organoleptic indicators of the food product.

Sugar

Sugar is the main food of pathogenic microorganisms. However, in high concentrations, sugar is harmful to bacteria. Thus, it can easily be used as a preservative. Even if you just mix fresh berries with sugar, they can be stored in this form for several months.

Honey

Honey is another natural preservative that can be used to preserve the freshness of meat. Honey has antiseptic and bactericidal substances, so almost all types of bacteria and fungi die in its presence.

Vegetable oil

Vegetable oil does not allow oxygen to pass through, so if you fill the product with sunflower or olive oil, it can be stored for a long time. As you know, many bacteria need oxygen for their vital activity. Thus, if you block the access of oxygen to the product, the bacteria and fungi in it die.
