So, for example, now we know that many plants do not want to be eaten - these are precisely grains and legumes. Their protective shell contains phytins and lectins, which are a low-concentration poison for the body. That is why it is recommended to soak or boil them for a long time when eating them.

Another trend of the past and current year is the return of fermented products without added sugar: kombucha drink, sauerkraut, kimchi, etc. In addition, they began to ferment various types of vegetables, adding spices to them. This is a trend long known to Slavs, which received an unexpected new creative development. During fermentation, beneficial bacteria are formed that improve intestinal microflora, thereby strengthening immunity and improving digestion.
