Beetroot is a great source of folic acid, as well as fiber, manganese and potassium.

Beetroot belongs to the same family as spinach and, like it, its leaves and roots can be eaten. However, while the leaves have a slightly bitter taste, its roots are sweet. 
 
The color of the vegetable is usually purple, but it can also be white or golden. As red beets have a high sugar content, they can be eaten raw, but more often they are boiled or marinated.
 
Red beets have exceptional nutritional qualities, especially when not ripe well. It is rich in calcium , iron and vitamins A and C. It is a great source of folic acid , as well as fiber , manganese and potassium. 
 
Beetroot has long been used for various medical purposes - mainly for liver disease , as it has the ability to stimulate detoxification processes . The pigment that gives it its specific color is betacyanin, which also inhibits the development of tumor cells . 
 
 
Due to its high fiber content , purple root has a beneficial effect on intestinal function , which prevents constipation and helps lower cholesterol levels . 
 
The fiber in red beets has been shown to increase the levels of antioxidant enzymes in the body, and also increases the number of white blood cells, which are responsible for detecting and eliminating abnormalities in the cells. 
 
Vegetables are also one of the richest sources of glutamine , amino acids that are essential for the health of the gastrointestinal tract and overall health.
