Rhubarb makes a wonderful jam, it is good in an open strawberry pie, and in Estonia they make a dessert with cream from it. Recipes for these and other rhubarb dishes are in our selection.
This sumptuous shredded rhubarb pie is easy to make and easy to remember! Grind 100 g of sugar with 200 g of butter and add 300 g of flour. A spoonful of baking powder and vanilla. Here is the dough! We tear off most of the dough and distribute it in a form with sides. Inside, randomly cut the rhubarb, and sprinkle with crumbs of the remaining dough on top. We send it to the oven at 180 degrees. In half an hour you will have a fragrant cake with a viscous caramel crust and a delicate sweet and sour filling. Serve with a scoop of vanilla ice cream and eat with a big spoon!

For test:
flour - 2 1/4 cups; butter - 250 g; cold water - 170 ml; sugar - 1 tbsp; salt - 1 tsp; apple cider vinegar - 1 tsp
Filling:
rhubarb - 4-5 stems, cut into 1 cm squares; strawberries - 500 g, cut in half; potato starch - 4 tablespoons; sugar - 1/3 cup; vanilla extract - 2 tablespoons; egg yolk + a spoonful of water - for greasing the pie.
Cooking dough. In a large bowl, mix flour, sugar and salt. Add chopped or grated butter. Make a well in the center and pour the mixture of cold water and vinegar into it. Rub the dough with a spoon to keep it in shape. Divide the dough into two parts, one a little more, gather into balls, wrap with cling film and put in the freezer for at least 1.5 hours.
Put rhubarb and strawberries in a bowl, add sugar, starch and vanilla, mix. Turn on the oven to 220 degrees.
Sprinkle the table and rolling pin with flour. Roll out most of the dough to a thickness of half a centimeter. Lay out in the form, making the sides. Lay out the filling. Roll out the smaller piece of dough as well and cut into strips. Lay on the pie with a wire rack, fasten the edges.
Beat the yolk with a spoonful of water and brush the top of the pie with a pastry brush.
Bake the cake in the oven at 220 degrees for 15 minutes, then lower the temperature to 180 degrees and bake for another 40-50 minutes until golden brown and bubbling. Cool and serve with ice cream.

You will need:
eggs - 5 pcs.; sugar - 150 g + 2 tbsp. l.; flour - 150 g; baking powder - 1 tsp; rhubarb, cut into pieces - 250 g; powdered sugar for dusting the finished cake.
To prepare the biscuit, separate the whites and yolks, as well as 150 g of sugar, into different bowls, so that each bowl is approximately equal. Beat both mixtures to stiff peaks, then mix gently. Gradually sift the flour and baking powder into the egg mixture, stirring with a spatula. Add rhubarb to the prepared dough, mix. Pour into an oiled mold. Bake at 180 degrees for 30-35 minutes until dry. Cool the finished cake on a wire rack and sprinkle with powdered sugar.
You can cook thick rhubarb jam in half an hour. This is a great treat and a wonderful gift for a friend.
Rhubarb Jam Ingredients:
sugar - 1 cup; salt - 1/4 tsp; juice of one lemon; rhubarb, large stems, cut into 1 cm pieces - 4 pcs.
Prepare jars and lids - wash and sterilize. Keep them in hot (but not boiling) water.
Place all ingredients in a large saucepan and stir. Turn on the stove to medium heat and cook the jam, stirring occasionally. Break up the rhubarb with a spoon while cooking. After 15-20 minutes, the jam will thicken.
Dry jars and lids. Pour the jam, screw on the lids. Place the jam jars in a pot of boiling water (half the jars filled) for 10 minutes. Then cool completely. Store jam in a cool place or refrigerator.

Rhubarb, Greek yogurt and shortcrust pastry can make an incredibly beautiful cake. A pinch of dried lavender will make it luxurious. Be sure to cook!
Dough Ingredients:
flour - 3 cups; chilled butter - 300 g; eggs - 2 pcs.; sugar - 1 cup; vanillin - 10 g; salt - a pinch.
Filling Ingredients:
sugar - 1 cup; flour - 4 tbsp. l.; eggs - 2 pcs.; Greek yogurt (can be vanilla flavored) - 180 ml; rhubarb, stems - 2-3 pcs.
Let's prepare the dough first. Mix flour, sugar, vanilla and salt. Add the diced butter, beat in the eggs and knead into a dough that holds its shape. You can add a spoon or two of cold water. Shape the dough into a ball, wrap with cling film and refrigerate for at least an hour. Then the dough will need to be rolled out (thickness - 1 cm) and laid out in a mold, making high sides.
For the filling, mix sugar and flour in one bowl, in a smaller bowl, beat the yogurt with the eggs. Then dry ingredients, stirring, add to the egg-yogurt mixture. Pour the mixture over the dough base. Dip the rhubarb stalks, cut into 3-4 cm pieces, into the flour and put in a spiral into the mixture. Bake at 180 degrees for 35-40 minutes. Sprinkle the finished cake with lavender or decorate with edible flowers.
You will get a sweet and sour rhubarb jelly with whipped cream. By the way, this is a traditional Estonian dessert, try it!

Boil three glasses of water. Dip the rhubarb in boiling water, add sugar and cinnamon, cook until tender. Add starch and bring to a boil. Kissel is ready! Pour into cups and cool, you can sprinkle with sugar. Serve with whipped cream.
