Tarte Tatin with onions

Juicy onions, balsamic vinegar, caramel and herbs de Provence... Luxurious onion pie will amaze not only with its look, but also with its taste! And we will cook it like this.

Ingredients for Tarte Tatin with Onions:

ready-made puff pastry - 240 g (you need a circle of dough, with a diameter of 32 cm); butter - 50 g; small onions - 5 pcs.; sherry - 100 ml; salt; a couple of sprigs of rosemary.

Roll out the puff pastry on parchment into a 32 cm circle. Prick with a fork and refrigerate while you prepare the filling. Preheat the oven to 200 degrees.

In a refractory pan (ideal diameter - 20 cm from the bottom, 25 from above, depth - 5 cm), which can be sent to the oven, melt the butter over medium heat, put the halved onions along the cut side up and fry for 5 minutes, then turn over and fry another 5 minutes until soft. Salt, add sherry and rosemary. Cover with a lid or foil and put in the oven for 20 minutes.

Take the dough out of the fridge and the pan out of the oven. Cover the skillet with the onions with the dough, gently pushing the edges of the dough inward so that the onions are inside. Bake for another 20-25 minutes until golden brown. Let the finished cake cool slightly and turn it over onto a wooden cutting board - put the board on top of the cake, then turn the whole structure over. Run a knife around the edges first. Salt and serve!
