For example, chicken and lamb go well with beef; pork is good with turkey and rabbit; minced chicken is compatible with rabbit, lamb and not bad with pork. The main thing - after grinding, do not mix different types of meat immediately, do it immediately before cooking.
If minced meat is dry, add whipped protein or cream. The dish will acquire a more delicate airy taste. And if there is too much liquid in the minced meat, crumble bread or crushed boiled potatoes into it. Fry minced meat products in a very hot frying pan. A quickly formed crust will not allow the juice to flow out. Some chefs, in order for the minced meat to turn out to be quite viscous and not crumble during cooking, recommend beating it off. To do this, pass the minced meat through a meat grinder several times, then take a deep pan, form a single lump of minced meat with your hands and throw it into the pan 5-6 times.
You can add melted butter, lard, soaked bread, tomato juice or tomato paste, apples, boiled rice, brewed oatmeal, semolina, grated cheese, zucchini, pumpkin, potatoes, carrots and fried onions to minced meat. From spices, all types of ground pepper, celery, garlic, turmeric, coriander, nutmeg, oregano are suitable. It is better to add all these additional ingredients while grinding the meat.
Pollock, pike perch, hake and cod are suitable for minced fish. To make it more juicy, add lemon juice. You can add flour, semolina, white bread with milk to liquid minced fish. Almost any vegetables are perfectly combined with minced fish, onions are especially well combined. From spices, garlic, ground black pepper, paprika, marjoram, tarragon and rosemary are suitable.
Few people recognize vegetable cutlets, but they are nutritious, easy and very tasty. Most often, potatoes, cabbage, zucchini, pumpkin, carrots and beets are used for vegetable cutlets. Grind with knives by hand, pass through a grater or beat with a blender. Potatoes must be raw. Immediately after grinding, it should be used, otherwise it will turn black. Cabbage, chopped, should be salted and left for half an hour. It will salt, become softer and let the juice go.
Pumpkin and beets should be baked or boiled in advance. Carrots are also allowed to be stewed in a pan. The same spices can be added to minced vegetables as in minced meat. As well as semolina, steamed oatmeal, eggs, butter and cream. But soaked bread is not worth it.
