All vegetables must be washed, the onion must be peeled. Cut them into large pieces, put them in a baking dish. Add peeled garlic cloves, drizzle with oil, balsamic vinegar, salt and pepper. We send it to the oven preheated to 180 for 30 or 40 minutes.

When ready, we peel the vegetables and beat with a blender, and then, putting them in a saucepan and adding spices, as well as a little water, put on fire. We put sliced ​​baguette slices and sprinkled with olive oil in the oven for 4-5 minutes at 200 degrees. Wash and dry the basil, grate the hard cheese.

When serving, garnish the hot soup with grated cheese and basil.

Sauerkraut soup

 

Ingredients:

beef on the bone - 0.5 kg; potatoes - 3-4 pcs.; onion - 1 pc.; carrots - 1 pc.; sour cabbage (sauerkraut) - 500 g; sunflower oil - 25 ml; salt, spices and herbs - to taste.

Any meat is suitable, but it is better to choose beef on the bone, which I wash and boil in a large saucepan (2.5-3 l). We take off the foam. Peel potatoes, onions and carrots, rinse. We rub the carrots on a grater, and cut the potatoes and onions. Pass the carrots with onions with the addition of oil, and transfer the potatoes to the prepared broth (after removing the meat). Here we add spices and lavrushka. We wash the sauerkraut, squeeze it a little and put it in a saucepan. Next, add the fried onions and carrots. In 15-20 minutes the cabbage soup will be ready. Add greens before serving.

And, of course, soups in good chicken broth with the addition of vegetables that are rich in vitamins. We also add spices, herbs and vegetables that help to resist colds and inflammation.

Chicken broth for colds

 

Ingredients:

chicken meat - 600 g; carrot; bulb; a clove of garlic; ginger root - 20 g; parsley - a small bunch; bay leaf - 1 pc.; water - 1.5 l; salt to taste.

Put the washed chicken in a saucepan, fill with clean water. Bring to a boil, skimming off any foam, and reduce heat to low. We cook 30 minutes.

Peeled onions, carrots and whole garlic add the broth. Here we also add bay leaf, peeled ginger root, parsley and salt. We cook until ready. We filter. Before serving, add chopped greens to a plate.

Carrot soup with ginger and celery

 

Ingredients:

carrots - 1 pc.; celery (root) - 250 g; ginger root - 25 g; salt to taste; water (you can broth) - 350 ml.

While water (broth) is boiling in a saucepan, finely chop the carrots, celery and ginger (peeled and washed). Then put in a saucepan, salt and cook over low heat until tender. Next, beat with a blender and, if desired, add a piece of butter. Ready.

Vegetable soup with chicken

 

Ingredients:

chicken - 1 pc.; potatoes - 3-4 tubers; leek - 1 stalk; carrots - 3-4 pieces; bay leaf - 1-2 pcs.; peppercorns - 5-6 pcs.; salt to taste; water - 3.5 liters.

We will boil the washed chicken in water over medium heat. After boiling, do not forget to remove the foam, salt and add spices. Without wasting time, peel the vegetables and chop them finely (except potatoes). Add vegetables to the broth, but first take out the finished chicken from it. We cook the soup until fully cooked, and cut the meat in portions and put it in plates. Pour the finished soup into bowls and serve. Be healthy!
