The New Year's feast is long, and hearty hot snacks will come in handy. Especially after incendiary dances or fireworks. We offer several options for festive snacks that can be served both hot and cold. We prefer meat snacks, but there is also an option with vegetables.

Meat loaf with vegetables

 

"Brick" of minced meat with fragrant sweet pepper, viscous cheese, interspersed with corn and carrots inside. An excellent hearty appetizer for the holiday table. Serve with sauces and pickles.

You will need:

400 g minced meat (pork or mix), 2 boiled carrots, 2 tbsp. l. canned corn, onion, 1-2 garlic cloves, egg, 1/2 tsp. spices for meat, salt to taste, a slice of a long loaf or a spoonful of breadcrumbs, a few tablespoons of water or milk, 80 g of hard cheese, 1/2 sweet pepper, 3 tbsp. l. sour cream, 2 tbsp. l. tomato sauce or adjika.

Minced meat in a bowl is combined with spices for meat, salt, breadcrumbs and milk (or soaked bread), garlic passed through a press, knead well. Add corn and chopped onion fried in a spoonful of vegetable oil, mix again.

 

In small rectangular heat-resistant forms, greased with oil, spread the cooked minced meat to half, put the whole boiled and peeled carrots in the center, tamp the minced meat on top, forming a loaf with a carrot inside.

 

We spread the bell pepper rings on the minced meat and send it to the oven preheated to 180 degrees for 20 minutes.

 

After 20 minutes, grease the top of the loaf with sour cream and adjika sauce, sprinkle grated cheese on top. We send it to the oven for another 20 minutes.

 

These meat loaves are perfect for hot dishes with pickles or pickled zucchini. They are also good cold with mayonnaise and horseradish sauce. Bon appetit!

Liver soufflé with mushrooms

 

Delicate liver soufflé with whole champignon inside. Looks amazing, worth every penny!

Ingredients:

600 g chicken or turkey liver, onion, carrot, egg, 4 tbsp. l. sour cream, 4 tbsp. l. wheat flour, salt, pepper to taste, a spoon or two of vegetable oil, 12-14 small whole mushrooms.

Soufflé is easy to make. Fry the peeled onions and carrots in a pan with a spoonful of oil until soft, after grating the carrots and finely chopping the onion with a knife. Clean the liver from films and grind into puree with a blender. Send the fried vegetables there and also punch until smooth. Add beaten egg, salt, pepper, flour and sour cream to the mass.

 

Grease muffin molds with vegetable oil, fill 3/4 with the finished mixture. Dip a clean button head down into each mold. Bake for 25-30 minutes in an oven preheated to 180 degrees. The sweetish taste of the soufflé will perfectly set off the pickled cucumber.

Minced meat muffins with quail eggs

 

For meat muffins, you can safely use more "dry" minced chicken or turkey; Wrap the cupcakes with bacon on top, which will flavor the meat with fat and juiciness. Inside each cupcake, hide a boiled quail egg.

You will need: 250 g of minced meat (any), 100 bacon (slices), 100 g of grated hard cheese, a chicken egg, 6 boiled quail eggs, salt, spices for meat to taste, a couple of tablespoons of mayonnaise.

Peel the boiled quail eggs. Mix minced meat with spices and a third of grated cheese. Line cupcake liners with bacon slices.

 

At a third of the height of the cupcakes, tamp the minced meat, insert the quail eggs and then fill with the remaining minced meat, distributing it between the molds. Top with a little mayonnaise.

Bake cupcakes in an oven preheated to 180 degrees for 25 minutes, then sprinkle with the remaining grated cheese and put in the oven for another 10-15 minutes. Cooled cupcakes are also delicious!

Tacos with beans and vegetables

 

If you celebrate the New Year in the country by the fireplace, dressed up in deer sweaters, then you can afford a Mexican taco appetizer. Our filling is spicy vegetable: beans, corn, tomatoes, cook it in a saucepan. And ready-made wheat cakes can be warmed up before serving in a dry frying pan or in the oven. The dish is also suitable for vegetarians.

You will need:

8 wheat cakes, half a can of white and red canned beans, half a can of canned corn, 60 g olives, 5 tbsp. l. mayonnaise, a spoonful of lemon juice, half a can of chopped canned tomatoes, 8 lettuce leaves, salt, paprika, chili, coriander, turmeric, dry garlic to taste, blue onion.

 

Pour the tomatoes into a heavy-bottomed saucepan and simmer them over low heat until the excess liquid has evaporated. Then add the beans and spices, stir and cook for another 5 minutes. At the end of cooking, add corn and pitted olives cut into 3-4 parts.

For sauce, mix mayonnaise with lemon juice.

 

Hang wheat cakes on a wire rack in the oven and heat at a temperature of 200 degrees for 6 minutes. Warmed up in this way, they will retain their shape. It remains only to collect the cakes and serve them on the table.

 

Put a lettuce leaf, a couple of tablespoons of the filling into each cake and pour over the sauce. Serve and eat right away. Enjoy!

Turkey croquettes

 

Such meat croquettes can be deep-fried in advance, and warmed up for several minutes in the oven before serving.

Ingredients:

400 g turkey fillet, half an onion, a clove of garlic, a small bunch of fresh herbs (leaf celery, dill or parsley), a slice of a long loaf, 30 ml of cream, a chicken egg, salt, black pepper to taste, hot pepper if desired, 6 boiled quail eggs (can be without them), 6 slices of cheese, rice flour or wheat flour + breadcrumbs + egg for breading, vegetable oil for frying.

In a blender bowl, chop the pieces of turkey fillet with chopped onion, garlic passed through a press, chopped herbs, a long loaf soaked in cream, salt and spices, a chicken egg. Mince for croquettes is ready.

 

If you want to cook small croquettes, then you can not add a quail egg inside, or add only half. So, for large croquettes, wrap a peeled quail egg with a strip of cheese. Make a small cake from minced meat, put an egg with cheese in the center and make a ball with an egg inside. Bread the blanks in rice flour or first roll in flour, then in a beaten egg, then in breadcrumbs.

Heat the oil in a tall saucepan and deep-fry the croquettes until golden brown, turning a couple of times. Then dry the croquettes on paper towels and put them on a parchment-lined baking sheet in the oven for 5-7 minutes. The oven temperature is 200 degrees.
