1. Puff pastry

To prepare puff pastry, you will need a minimum of ingredients, the main problem is only in proper kneading and rolling, so follow the instructions clearly.

Ingredients:

250 g wheat flour (plus for dusting the table); 200 g of the highest quality butter; 100 ml of ice water; 1-2 pinches of salt.

 

Sift flour into a bowl and add 40 g chopped butter (some add fat), wipe with your fingers. Slowly add water and knead a homogeneous elastic dough, if necessary, add a little water. Wrap in cling film and refrigerate for 30 minutes.

Chilled, but not frozen into a stone, put the butter between two sheets of parchment paper and roll it with a rolling pin into a rectangle 14 by 16 cm.

Take the dough out of the fridge and roll out on a floured board into a 16cm x 30cm rectangle.

For both cases, the figures are indicative. The dough rectangle should be twice as long as the butter rectangle, that's all.

Put the butter on the dough so that it is on one half, cover the other half with the butter like a book. Roll out the dough with a rolling pin, trying to return the previous dimensions of 16 by 30 cm. Do not forget to sprinkle the surface with flour.

Now fold the rolled out sheet of dough like this. Visually divide the dough into three parts, wrap a third of the dough from the top to the center and a third of the dough from the bottom to the center. Remove excess flour with a pastry brush. You get such a folded book, turn it and fold it again the same way: wrap a third on top and a third on the bottom. Wrap in clingfilm and chill for 20 minutes, then repeat the rolling and folding process 4 more times, chilling for 20 minutes after each in the refrigerator. And only then you can choose from the cold and cook your favorite dishes!

2. Yeast dough

 

Yeast dough is very easy to prepare, the most important thing is to let it brew and rise, it is at this moment that the yeast diverges.

Ingredients:

500 g wheat flour; egg; 0.5 teaspoon of salt; 1 teaspoon of sugar; 20 g fresh yeast; 50 ml of vegetable oil; 250 ml of water or milk.

In warm water or milk (37 degrees), dilute the yeast. When the yeast dissolves, add the egg pounded with salt and sugar to it, then gradually introduce the sifted flour. Knead a homogeneous dough, add vegetable oil. Knead until the dough is no longer sticky to your hands. Gather the elastic, not tight dough into a ball and place in a bowl under a kitchen towel or cling film. Leave in a warm place for 50 minutes or until the dough has doubled in size. Then punch down the dough and let it rise again. And then you can cook!

3. Shortbread dough

 

Shortbread dough is very often used in the preparation of sweets, it turns out to be tender, loose and soft.

Ingredients:

500 g wheat flour; 400 g butter; 200 g of sugar; 10 g vanillin.

Rub the butter on a coarse grater, mix with flour, sugar and vanilla. We grind all the ingredients into dust with our hands, and only then we combine them together, creating a dense and uniform consistency. You can add a spoonful of water. Transfer the dough to a bowl, cover with cling film and refrigerate for 30 minutes. After half an hour you can cook.

4. Dough for dumplings

 

You can cook homemade dumplings in less than half an hour. To do this, you need minced meat with onions and dough. Prepare the dough for dumplings in boiling water.

Ingredients for dumpling dough:

300 g of premium wheat flour; 150 ml of water; 2 tbsp. spoons of refined vegetable oil; 0.5 teaspoon of salt.

In a deep bowl, sift the flour with salt, pour in the oil, mix. Bring the water in a saucepan to a boil, gradually, stirring the flour with a spoon, pour boiling water. When the dough has cooled slightly, knead the soft elastic dough with your hands and collect it in a bun. Wrap the dough in cling film or cover the bun with a kitchen towel and leave at room temperature for 30 minutes. After half an hour, roll out the dough and make dumplings.

5. Yeast-free pizza dough

 

Of course, each person loves a different pizza, someone on a thin dough, someone on a thick one, but we will tell you the simplest recipe for making pizza dough from ingredients that are always at hand.

Ingredients (for 2 pizzas);

500 g wheat flour; 150-180 ml of pasteurized milk 2.5%; 4 tbsp. l. vegetable oil; egg; a pinch of salt; 0.5 teaspoon of soda; 1 teaspoon of table apple cider vinegar (9%).

In a deep bowl, lightly beat the egg, pour in milk, butter, add salt, soda, and at the very end apple cider vinegar, wait for the quenching reaction. After that, we introduce flour in portions, slowly knead the dough, first with a spoon, then with your hands. As soon as the dough acquires a homogeneous consistency, we transfer it to a bag and leave it at room temperature for 10-15 minutes, then you can immediately cook it. The dough is thin and tasty.
