Going to a Japanese restaurant or ordering sushi at home has long become one of the usual lunch or dinner options for us. However, few people know how to properly serve and eat rolls , as well as use chopsticks. Let's break down the main gastronomic myths related to sushi and find out why restaurants bring us wet towels.

Let's start with soy sauce. Now there are several dozens of types and varieties of this dressing on store shelves, but as for the Japanese, there are only 2 main soy giants for them - Kikkoman and Yamasa. Someone likes one, someone another, but it is difficult to distinguish them blindly by taste and color. Historically, Kikkoman is more often sold in metropolitan areas, and Yamasa - in rural areas.

A good soy sauce should be naturally cooked, it should contain nothing but water, soy, wheat, salt and a small amount of alcohol. Depending on the type of sauce, soybeans are pre-boiled, wheat can be fried, all products are mixed and kept for a long time for natural fermentation. Some varieties of sauces may contain sugar, vinegar and algae.

But if a long list of ingredients is indicated on the label, you are most likely dealing with an artificially synthesized sauce. It is better to avoid them.

However, choosing the right sauce is half the battle. It is necessary to roll sushi very carefully. And with the fish side, and not as we usually do it - with rice. The thing is that the rice instantly absorbs the liquid, and you will not feel the taste of the dish itself - the salt in the sauce will kill it.

As for the sticks, everything is not as radical as it might seem. In our culture, it is not customary to use them, because the Japanese will not expect skill from you - by asking for a fork in a restaurant, you will not offend anyone. Sushi is usually eaten with hands. They are very fragile, and when you use chopsticks, they are easy to break without bringing them to your mouth. In addition, when you eat with your hands, you get not only gastronomic, but also tactile pleasure. In elite Japanese restaurants, of course, guests are brought chopsticks, but they are mainly used by tourists.
