Salt and pepper the beef, fry on all sides until a crust forms with the addition of oil and thyme sprigs. Place in refrigerator for 10 minutes.
Lay out the bacon or jamon so that you can wrap the meat in it. It is best to do this on cling film. Then distribute the mushroom pate and lay out the beef, smeared with mustard, wrap in a roll.

canned beans - 2-3 large jars (depending on servings); tomatoes in their own juice - 300 ml: spinach - 150 g; medium onion - 1 pc; garlic - 3-4 cloves, thyme (to taste); chili 2-3 pods; balsamic vinegar - 2-3 tbsp. spoons; Tabasco sauce (or any hot sauce to taste); grated cheese - 70-100 g; salt, black pepper, paprika (to taste).
In a deep frying pan, sauté the chopped garlic, thyme and finely chopped chili in plenty of olive or vegetable oil (after removing the seeds). After the garlic turns golden, add onion, vinegar to the oil, then simmer for 5-7 minutes. Drain the liquid from the beans, send to the pan along with the spinach and tomatoes. Add hot sauce, paprika, salt and pepper. Fry for 5 minutes, transfer to a baking dish, cover with foil and put in the oven for 30-40 minutes. Sprinkle with cheese 10 minutes before serving and garnish with fresh spinach before serving.
