Truffles are a type of fungus that grows underground in the roots of mycorrhizal trees, and there are over 30 species. Their shape is irregular and with a rough surface. Mushrooms are grown mainly in Asia, Europe and Africa. From there comes the largest yield per year - about 150 tons.

Research shows that production has been much higher in earlier years and is gradually declining, causing their price to rise. That is why truffles are one of the most expensive foods in the world. It is difficult to obtain, thanks to specially trained pigs or dogs that sense the aroma of underground mushrooms.

 

The most common species are white, black, black summer, black winter, black kidney, black smooth and gray-white truffles.

 

They differ in color, shape, aroma, size, as well as the places and plants under which they grow. Mushrooms are extremely valuable, so they are used in medicine, pharmaceuticals, cosmetics, cooking.

They are rich in vitamins such as B12, B6 and B2, as well as protein, sulfur, phosphorus, cellulose and other important elements. Therefore, although expensive, truffles are used for medicinal purposes, as their consumption:

 

  •  lowers cholesterol
  •  improves the function of nerve and muscle tissue
  •  promotes blood circulation
  •  improves vision
  •  regenerates skin, nails, hair growth
  •  promotes heart activity and transports oxygen to the lungs and brain
  •  cleanses the body of toxins
  •  is suitable for diabetics
  •  provides amino acids
  •  helps fight iron deficiency anemia

 

All these benefits of the plant make it more valuable than gold. Truffles are used in cooking, and their consumption is considered a symbol of luxury and abundance. Since ancient times, the mushroom was known and used as an aphrodisiac and staple food.

Today it is used to prepare various gourmet dishes, pasta and aromatic pâtés, mayonnaise and oil, which are extremely rich in vitamins and minerals.

 

The taste and aroma of truffles are great, so Italian cuisine is offered raw, as a side dish or grated on risotto, pizza and salads.

 

Store fresh by placing in airtight jars in a cool, dark place.
It is important to know that we should not overdo the consumption of truffles, as in large quantities they cause digestive problems and stomach discomfort.
