Make mice, make eyes and a nose from dragees, candied fruits or raisins, skewers or a strip of marshmallow are suitable for the tail. Refrigerate.

Shortbread cookies in the form of mice

Put the chicken in a large saucepan, cover with water and put on fire. Bring to a boil, remove the foam, add the peeled carrots and onions, bay leaves, salt, pepper and cook on a slight boil until the chicken is cooked (the meat should come off the bone easily).

Put the finished chicken on a dish, separate the meat from the skin, bones and cartilage, chop finely.

Strain the broth. Pour gelatin with 50 ml of cold water, when it swells (after 20 minutes), stir in hot broth until dissolved.

Mix the meat with chopped peeled garlic. Put in a bowl for serving (one large or several bowls). If desired, add canned peas or corn to the meat, slices of boiled carrots, greens and pour the cooled broth over. Place in the refrigerator until completely solidified.

From boiled quail eggs, peppercorns and chicken ham or cheese (for ears and tail), make small mice and decorate them with aspic. Enjoy!

Hard boil eggs, cool and peel.

Set aside a few whole crab sticks, grate the rest on a fine grater. Set aside half of the grated crab sticks on a separate dish, pour the rest into a bowl. Grate eggs, processed and hard cheese there, pass garlic through a press and mix with mayonnaise.

From the resulting mass, blind the body of the mouse in the shape of an egg, roll in grated crab sticks.

Stuffed squid for the Year of the Rat

 

2 large thawed squids 50 g rice 1/2 small onion 50 g mushrooms (mushrooms or wild mushrooms) 2 tbsp. l. sour cream 70 g hard cheese 2 tbsp. l. vegetable oil greens, salt, black pepper to taste

Boil the rice until tender in salted water according to the instructions, drain the water.

Pour boiling water over the squids for a minute, then immediately lower them into ice water. Clean the squid from the film, select the chord and entrails if your squids are unpeeled. Cut off the fins.

Peel the onion and cut into small cubes, also chop the mushrooms. Heat the vegetable oil in a frying pan, fry the onion until soft over medium heat, then add the mushrooms. Fry until liquid evaporates. Then add boiled rice, warm for a minute. Remove skillet from heat, cool. Add chopped squid fins, grated cheese, chopped greens, salt, pepper to the filling. Stir.

Stuff the squids, filling them 2/3, fasten the edges with toothpicks. Put on a baking sheet covered with parchment and put in an oven preheated to 180 degrees for 5-6 minutes.

Decorate ready-made squids with fresh cucumber, boiled carrots or sausage, making ears and tail out of them. Insert the ears into the notches. Make eyes and nose from canned peas or peppers.
