In this article, learn more about Zucchini Enters A New Role. Spring is the season of zucchini, and they enter a new and unexpected role.

It's as if everything has already been said about zucchini . Juicy, tasty, useful for the health of the eyes and heart, and are an excellent helper in the eternal battle for a slim waist. Zucchini is also suitable for asthma because of its high content of vitamin C, carbohydrates, protein and fiber. They also contain significant amounts of potassium, phosphoric acid and vitamin A, important for maintaining good health, as well as valuable magnesium, copper and phosphorus, omega-3 fatty acids, zinc and others.

In the spring, zucchini are increasingly present on the table, but their culinary incarnations have long gone beyond the heat of a frying pan with oil and served with milk-garlic sauce. Have you heard of zucchini muffins? Yes, there is such a dessert, and the reason is not only because zucchini is actually a fruit, not a vegetable. The idea is that in the world of cooking, experiments are welcome, and zucchini is a great option for that.

Cooking sites overflow with ideas - from morning pancakes with grated zucchini, through a healthy pizza with plenty of seasonal vegetables on top or a solid zucchini paste with avocado cream. But who would have guessed that vegans usually include zucchini as the main ingredient in their favorite chocolate brownie?

The secret of this appetizing variation is shared in the culinary blog Texanerin Baking and looks great. Brownie is made from 100 percent whole grains, without dairy products and without added fat. The trick here is to use apple sauce instead of oil, and the zucchini helps hold the dough together and provides an added dose of folate and vitamin A.

It's not difficult at all, as long as you swallow the initial shock that zucchini actually predominates in the chocolate dessert. The time to stir the mixture is only 10 minutes, and the result of the finish is stunning.

The ingredients for 16 pieces of brownie are 2 large eggs, 1 tablespoon vanilla extract, 3/4 cup coconut sugar or unrefined sugar or granulated sugar, 1/4 cup (60 ml) unsweetened apple sauce, 1 cup (125 grams) wholemeal flour or wholemeal flour, 1/2 cup (45 grams) cocoa powder, 1 1/2 teaspoon baking soda, 1/4 teaspoon salt, 2 cups (about 300 - 320 grams) peeled and grated zucchini and 1 cup semisweet chocolate chips + 1/2 cup mini chocolate chips, which the dessert is sprinkled on top.

In a large bowl, mix the eggs, vanilla, coconut sugar and apple sauce and let it sit for 5 minutes to dissolve the coconut sugar. In a separate bowl, mix together the flour, cocoa powder, baking soda and salt. Add the dry mixture to the wet one and mix gently while combining. Then add the zucchini and 1 cup of chocolate chips. Sprinkle the brownie on top with 1/2 cup of mini chocolate pieces. Bake for 30-35 minutes.
