Initially, he called his invention "Epskil", let's combine the first letters of his last name and the word "ayskil" - an icicle (icicle). But his own children began to call this ice cream daddy's icicles (papskil), which stuck, although it changed a bit to popskill.
Popskill's success came at the summer sports games in the 1920s. In production, special mixtures and molds are used to make it, but it is quite possible to make popskill at home in the refrigerator, as the first samples of this ice cream were made by Frank Epperson.

There are some general recommendations for those who decide to make popskill at home:
Do not fill forms to the brim. After all, ice cream will increase in volume when cooled; Use only homemade non-carbonated lemonade; To make popskill, you can use molds for yogurt, jelly, chocolate, ice and disposable cups; Plastic spoons can easily replace chopsticks; The main problem of popskill is uneven sticks. So that they do not fall on the edges of the mold, take the foil, make holes in it and cover the molds, insert sticks into the holes. Or put the ice cream molds in the freezer for half an hour, then remove and insert the sticks into the half-frozen mass, return it back; Ice cream will be easy to remove from the mold if immersed in hot water for 5-10 seconds.
We offer several recipes for making ice cream with just two ingredients.
Take 250 ml of natural yogurt without additives and sugar, 2 egg whites, 1-2 limes, 50 g of powdered sugar.
Puree the limes in a blender and add to the yogurt. Beat egg whites with powdered sugar. Pour in the lime-yogurt mixture, stirring gently. With a spoon, carefully spread out into molds and insert on a wooden stick.
This recipe is closest to the classic popskill. You will need: 0.5 l of lemonade, 2-3 tbsp. honey, juice of 1 lime, berries or fruits to taste.
Mix lime juice, lemonade and honey, dilute a little with cold water and fill the molds halfway with the mixture. Send to the refrigerator for 30 minutes. During this time, prepare fruits or berries (peel the berries from the tails, cut the fruit into pieces). Take out the molds, add berries and fruits to them, fill with the mixture, insert the sticks. Keep in the refrigerator for 4 hours. Honey can be replaced with maple syrup.
60 g sugar, 2-3 tbsp. matcha tea (matcha), 0.5 l of coconut milk.
Mix the ingredients, beat with a blender, you can add 2-3 tsp. chia seeds, pour the mixture into molds, immerse the sticks, put in the freezer for 4.5 hours.
0.5 l lemonade, 2-3 tbsp. l. sugar, 1 tbsp. l. honey, 300 g gelatin bears, lime or apple juice.
Mix lemonade, sugar, honey and juice, add a little water. Pour into molds, send for 45 minutes in the freezer. Get it, pour the bears into the ice cream and insert the sticks, send it to freeze for another 4 hours.
500 g watermelon pulp, 300 g strawberries, a few sprigs of mint, 1 tsp. vanilla extract, 4 tbsp. maple syrup or honey.
Grind all the ingredients and mix in a blender, pour into molds, stick in the sticks and put in the freezer for 4 hours.
2-3 bananas, 0.5 l of lemonade, 3 tbsp. l. chocolate syrup, 2 tbsp. l. vanilla extract, 1 tbsp. cold cocoa, 3 tbsp. l. Sahara.
Mix lemonade, chocolate syrup, vanilla extract, cocoa and sugar. Pour into molds and send for 40 minutes in the freezer. Cut bananas into slices. Get ice cream, put 2-3 circles of bananas in each mold, insert sticks, freeze for another 4 hours.
200 g muesli, 400 ml natural yoghurt, 2 tbsp. vanilla extract, 3 tbsp. l. sugar, 2 tbsp. maple or other syrup / honey, 1 tbsp. apple juice, fresh berries or jam.
Grind the berries in a blender. Mix the remaining ingredients, except for muesli, pour into molds and send to the freezer for half an hour. Then take it out of the freezer, pour 1-2 teaspoons of jam into each mold or add chopped berries. Send to the freezer for another 1 hour. After an hour, insert the sticks, sprinkle the muesli base of the ice cream, return to the refrigerator.
1 lime, juice of 1 lime, 2-3 sprigs of mint, 750 ml of lemonade, 300 ml of lemon juice, 250 g of sugar.
Make syrup from sugar and water. Mix lemonade, lemon juice, lime juice and cooled syrup. Pour the mixture into molds, spread mint leaves and lime slices on them. Refrigerate for 4.5 hours.
5 kiwi, 500 ml. natural yogurt, 2 egg whites, 4 tbsp. l. sugar, 2 tbsp. vanilla extract, 1 tbsp. lemon juice.
Beat egg whites with sugar and vanilla extract. Pour yogurt and lemon juice into them, mix thoroughly, pour into molds and send to the freezer for 40 minutes. Peel the kiwi and cut into slices. Take out the ice cream, put 1-2 slices of kiwi into each mold, return to the freezer for 4 hours.
Strawberries, 0.7 ml strawberry lemonade, 180 ml rum, 1 tbsp. lemon juice, 250 g sugar, water.
Grind half of the strawberries in a blender, add 2 tbsp. l. sugar and stir. Make syrup with remaining sugar and water. Add rum, lemon juice, crushed strawberries, strawberry lemonade, lemon juice and rum. Stir, pour into molds and put in the freezer for 40 minutes. Cut the remaining strawberries into halves, add with sticks to ice cream and freeze for 4 hours.
