Rice is a product that is consumed every day in all parts of the world. It is a major source of vitamins , minerals and carbohydrates. However, it is possible that the rice is contaminated, which can be a health risk. Here are some of the most common pollutants we should be aware of.

1. Arsen

Arsenic is one of the most common contaminants in rice. As rice grows under water, the amount of arsenic is ten times higher than other cereals. The metalloid accumulates in the husk, which is usually removed during processing - as a result of this process we get white rice. 
 
Brown rice contains higher levels of arsenic. Scientists explain that excessive exposure to arsenic can lead to the development of certain cancers , cardiovascular disease and skin lesions. 
 

2. Toxins from bacteria

 

Aflatoxins are harmful substances that are produced by the bacteria Aspergillus . They are common contaminants in products such as rice. Heavy rain conditions and very high humidity favor the growth of these bacteria , which ultimately leads to contamination of the product. 
 
High amounts of these bacteria are found in those crops that are damaged by rain. They contain carcinogens and hepatotoxins. 
 
 

3. Lead and cadmium


Larger amounts of lead and cadmium are found in processed rice.
 
Some fertilizers contain unreasonable amounts of cadmium , which is absorbed by the soil. High amounts of lead in the diet can damage the brain and lead to digestive problems.
