Mashed potatoes with herbs

 

Ingredients:

5 medium potatoes A few sprigs of thyme A bunch of parsley A small bunch of green onions 1/2 cup milk 1/4 cup cream 70 g butter Salt, pepper 

Wash potatoes, peel and cut into large cubes. Put in a saucepan, cover with water and salt. Bring to a boil, then lower the heat and simmer for 20 minutes. The potato will be ready when the fork is free to enter into it. While the potatoes are cooking, blend the chopped parsley and onion with 1/4 cup milk in a blender. Drain the cooked potatoes in a colander, select the thyme, then place in a bowl. Pour the remaining milk, cream, butter into the pan where the potatoes were boiled. Heat over low heat, stirring until butter is melted. Mash the potatoes in a bowl with a potato masher and add to the milk-butter mixture. Stir, turn off the heat and add the green puree. Ingredients:

1 1/4 cups flour 150 g butter 2 eggs 2 tbsp. tablespoons grated Parmesan 1/2 cup heavy cream 1/2 cup cottage cheese 4 tbsp. spoons of cold water 1 tsp. dried oregano 1/4 tsp. salt a bunch of green onions

Beat flour, salt, oregano with pieces of butter with a mixer until coarse crumbs. Add water and knead the dough. Wrap the dough with cling film and send it to the refrigerator for half an hour. Then roll out and lay out a 24-26 cm form, be sure to form the sides. Pour peas on the base and bake for 12-15 minutes in the oven at a temperature of 210 degrees. Then choose peas and cool in the form.

Beat cottage cheese, cream, eggs until light foam. Pour the mixture into the tart, top with Parmesan and top with the onion flakes (sliced ​​or whole). Bake for 20-25 minutes at a temperature of 210-220 degrees. Hold for another 5 minutes in the form, then you can serve.
