Each housewife has her favorite recipe for charlotte, according to which this apple pie turns out to be super delicious. What is "charlotte" and why is the pie called that?

We call charlotte an easy-to-make sponge cake with apples, although in fact it is a German dish of white bread, eggs, custard, fruit and liquor.

There are several versions of the origin of the name Charlotte. The most popular is associated with the name Charlotte and a hopelessly in love chef. According to another version, the name comes from the English word charlyt, which means a sweet dish of eggs, milk and sugar. More precisely, it is a warm pudding made from white bread soaked in eggs and apples boiled with sugar.

There is also a Russian charlotte, invented, however, by a Frenchman. It consisted of French savoiardi cookies, Bavarian custard, ready-made biscuit and whipped cream.

Charlotte is prepared with plums, pears, berries, raisins, cream instead of fruits. But traditionally they still bake apple charlotte, and the real "charlotte" boom comes in the fall, during the picking of apples.

We will tell you how to cook a lush high charlotte with melting pieces of apples and a crispy sugar crust. This charlotte is best eaten warm with a scoop of ice cream.

So, the ingredients for charlotte:

900 g sweet and sour apples; 5 eggs; 200 g + 2 tbsp. l. Sahara; a pinch of vanillin; 1 st. l. cinnamon; 2 tbsp. l. starch; 50 g butter; a spoonful of vegetable oil for greasing the mold; 1 st. l. lemon juice.

 

Rinse apples, dry, peel. Cut into equal cubes, and one apple into slices. Drizzle with lemon juice, then roll in the cinnamon-cornstarch mixture.

 

Turn on the oven to heat up to 180 degrees and grab the dough. In a tall bowl, beat the eggs with a mixer until light foam, then, continuing to beat at high speed, gradually introduce 200 g of sugar. The whole process will take you 8-10 minutes, our goal is to dissolve the sugar. If you do everything right, then baking powder is not needed. If in doubt, add a teaspoon.

 

We put the mixer aside, take a spatula and in three steps we introduce the sifted flour, gently mixing from the bottom up. Then we transfer a third of the dough with a spoon into a mold greased with vegetable (or butter) oil (24 cm in diameter). You can sprinkle the form with breadcrumbs, and then pour the dough.

 

Put all the apples on the dough layer, except for the slices. Pour the remaining dough or spread it with a spoon. You can bang the mold on the table to spread the dough faster. Arrange apple slices on top and brush with melted butter. Sprinkle with sugar, we have 2 tablespoons for this.

 

Send the form to the oven preheated to 180 degrees for 45 minutes. Bake until a dry match. Depending on the oven, the baking time can be up to an hour. Cool the charlotte in the form, then carefully remove. Enjoy!

Apple pie with bread

 

For this version of charlotte (classic, I must say), you need pieces of white bread or a long loaf. Yesterday's or the day before yesterday's stale bread is ideal. We will not use flour! It is better to take apples for charlotte with sourness - it will be ideal with a sweet biscuit. It is often asked whether it is necessary to add cinnamon to charlotte (sometimes it is simply not at home). We answer: if you wish, love cinnamon, add, of course, no - no.

Ingredients for Charlotte Bread:

400 g of white bread or loaf; 2 eggs; a glass of milk; 400 g of apples; 150 g of sugar; 20 g butter; cinnamon to taste.

 

Beat one egg with half sugar (75-80 g) with a whisk, add milk and mix. Prepare a cake pan - grease it with butter. Cut the bread into slices. Dip the slices of bread into the milk-egg mixture, wring out lightly and spread on the bottom and sides of the mold. You should leave part of the bread, leave the smaller part for another layer.

 

Wash the apples, if you wish, peel and cut into slices. Lay half of the slices on the bread, sprinkle with sugar and cinnamon, then cover with another layer of bread. If the egg-milk mixture remains, then pour it over the bread, put a layer of apples on top again, sprinkle with cinnamon and sugar.

 

Send the form with the dough to the oven preheated to 180 degrees for 50 minutes to an hour. By the way, it is convenient to bake such a charlotte in a detachable form. Go around the edge with a knife and carefully remove the ring. Serve warm charlotte.

Charlotte with apples and dried apricots

 

For charlotte, you can use any dried fruits and dried or dried berries. Charlotte with dried apricots turns out beautiful and tasty. For this pie, we caramelize the fruit for a sumptuous dessert!

Ingredients for charlotte with dried apricots:

600 g of apples; 120 g dried apricots; 4 eggs; a glass of flour; a glass of sugar; 50 g butter.

Soak dried apricots in boiling water for 20 minutes, wash the apples, peel and cut into small cubes.

Melt 2 tablespoons of sugar in a frying pan, add butter, also melt. Add dried apricots and apples dried with a paper towel and fry, stirring, over medium heat until the fruits are completely covered with caramel. Then put them on a dish and cool.

Beat the eggs with sugar in a lush foam with a mixer, then with the help of a spatula add the sifted flour in parts. Mix from bottom to top.

 

Pour the dough into a greased and floured form, lay out half the fruit and send it to the oven preheated to 180 degrees for 30 minutes.

After half an hour, pull out the form, put the remaining apples with dried apricots and bake for another 15-20 minutes until cooked and a dry toothpick. Cool the finished cake and sprinkle with powdered sugar.

Chocolate charlotte with apples

 

We will cook this unusual charlotte on rice flour with cocoa.

For Chocolate Charlotte with Apples you will need:

1 kg of apples; 2 eggs; 100 g butter; 80 g of sugar; 300 g rice flour (you can use wheat flour); 10 g baking powder; 2 tbsp. l. cocoa powder.

In a bowl, combine flour, cocoa and baking powder. In another tall bowl, beat the eggs and sugar with a mixer until foamy, continuing to work with a mixer, add the melted and chilled butter. Then we introduce the sifted flour in portions. All this time the mixer helps us. Mix peeled and diced apples with the resulting dough.

 

Pour the mass into a greased and sprinkled with flour or breadcrumbs form. If desired, sprinkle the top of the pie with cinnamon and sugar.

Bake charlotte at 170 degrees for an hour, at least 50 minutes. Check readiness with a match inserted into the dough, not apples.

Charlotte with apples and cherries

 

For this version of charlotte, both fresh and frozen cherries are suitable. She will give the cake a luxurious sourness.

Ingredients for Charlotte with Apples and Cherries:

7 eggs; according to 7 st. l. flour and sugar; half a teaspoon of vanilla sugar; 3 apples; a glass of fresh or frozen pitted cherries; a spoon or two of lemon juice.

Wash the apples, cut into slices and sprinkle with lemon juice. Separate the whites from the yolks and put them in different bowls. Add half the sugar to each, vanilla sugar to the yolks. Beat both masses with a mixer, proteins - to peaks, yolks - to a light mass. Then add the sifted flour into the yolk mixture in 4 passes, mix with a spatula. At the end, add whipped proteins, also mix with a spatula.

Grease a baking dish with oil and sprinkle with flour or cover with parchment. Lay out apples and cherries, fill with dough. Bake for 25 minutes at 170 degrees. Check readiness with a match.

Let the cake cool slightly, put a plate upside down on the mold, turn it over so that the fruit filling is on top. Sprinkle the rollover with powdered sugar and serve.
