The diet is applied in all these cases, if the patient has no problems with the digestive system. It is developed taking into account the place and nature of the tuberculosis process, the condition of the digestive organs, possible complications.

 

Purpose of the diet

To improve the nutrition of the body, to increase its defenses, to accelerate the recovery processes in the affected organs.

 

General characteristics of diet № 11

The diet is high in calories, which increases the content of animal proteins (especially milk), vitamins, minerals (calcium, iron, etc.). The amount of fat and carbohydrates is moderately increased. Culinary processing and temperature of the products is normal, and meals are 5 times a day.

 

Chemical composition and calories

Protein - 100-120 grams (60% animal), fat - 100-110 grams (20-25% vegetable), carbohydrates - 400-450 grams, salt - 12-15 grams, free liquid - 1.5 liters. Energy : 2900-3100 kcal.

 

Authorized foods and products:

  • Bread and pasta: wheat and rye bread, various pastries (pies, biscuits, muffins, etc.)
  • Soups: all kinds
  • Meat and fish: different types of meat and fish, but not very fatty. There is no limit to the preparation. Liver, meat (sausages, ham, sausages), fish (herring, caviar, canned sprats, sardines, etc.) and non-fish seafood.
  • Dairy products: all types, the consumption of cottage cheese and cheese is mandatory.
  • Eggs: cooked differently.
  • Cereals: various (especially buckwheat and oats), pasta. Legumes: well cooked and mashed.

  • Confectionery: various sweet foods, honey, jam, etc.
  • Sauces and spices: milk red sauces, Béchamel sauce, cream, milk-egg, etc .; spices in moderation.
  • Drinks: all kinds, fruit and vegetable juices, decoctions of rose hips and wheat bran are mandatory.
  • Fats: oil and vegetable oil in natural form, melted butter - for cooking.

 

The diet does not allow the consumption of : very fatty meats and poultry, beef, lamb and cooking fats; spicy and greasy sauces; cakes and pastries with a large amount of cream.

 

Approximately the menu for diet number 11:

  • 1st breakfast: salad of fresh cabbage with apples and cream, omelet, oatmeal with milk, tea with milk
  • 2nd breakfast: cheese, tea
  • Lunch: vegetable soup with meat broth and cream, roasted chicken with boiled rice, compote
  • Afternoon snack: rosehip decoction
  • Dinner: meat nest stuffed with egg and onion, carrot puree, buckwheat casserole with cottage cheese, tea
