The synthetic substance is formed as a result of the reaction of benzoic acid with potassium carbonate, also in the oxidation of toluene and the interaction between potassium methylbenzoate and thioacetate. May contain impurities: free benzoic acid, carbonates, peroxybenzoates. Has the ability to inhibit the development of mold, yeast and some bacteria. It best exhibits its properties in low pH (below 4.5) environments, where it exists in the form of benzoic acid.

Use

Unlike benzoic acid and its sodium salts, E 212 is rarely used. Potassium benzoate preserves products and beverages with acidic environment such as: fruit juices (with citric acid), carbonated beverages (with carbonic acid), soft drinks (with phosphoric acid), pickles (with vinegar). The preservative is used to extend the shelf life of low-calorie marmalades, candied cherries, cosmetics.

The process of preserving the product begins with the entry of benzoic acid into the cell. If the acidity of the intracellular space is less than or equal to 5 pH, the intensity of anaerobic fermentation of glucose, passing under the action of the enzyme phosphofructokinase, decreases to 95%.

E 212 is approved for use in most countries, including the United States, Canada, eurozone countries. In Europe, foods containing this preservative are not recommended for consumption by children.

Impact on humans

In combination with ascorbic acid, sodium and potassium benzoates can be in the form of benzene, which is known for its carcinogenic properties. Heating, light and long-term storage affect the level of benzene formation.

Potassium benzoate is absorbed in the gastrointestinal tract and excreted by the kidneys. Even small amounts of it have a toxic effect on animals.

The permissible daily amount is 5 mg / kg. E 212 is a supplement that has a carcinogenic effect, causes allergic reactions, asthma, urticaria, stomach irritation, behavioral changes. The foods it contains are not recommended for children, especially under 1 year, because the preservative is a cause of increased arousal and affects emotional and intellectual development.
