E224 is a preservative, antioxidant, color stabilizer. Represents colorless crystals, sometimes it can be white crystalline powder or granules with the smell of sulfur. It can oxidize in air, turn into sulfate. The preservative dissolves well in water, but is completely insoluble in ethanol, oils and fats. It is obtained by the reaction of a boiling solution of potassium sulphite with sulfur dioxide. The permissible daily dose per kilogram of body weight is 0.7 mg. The supplement breaks down into simpler substances in the body, so it is excreted freely through the excretory system. Although supplements E223 and E 224 are interchangeable, the use of potassium pyrosulfite is preferred because it does not affect the body's sodium balance.

The additive is actively used in the food industry as a basic preservative and antioxidant in the final processing of wines, also to preserve the corresponding color and taste of the final product. But it also affects the level of potassium in the wine, which directly increases its extraction, and this is a big minus, because it changes the taste of the drink.
