Potassium sulfite or the additive E 225 is a white crystalline substance that dissolves in water. It belongs to the group of preservatives that preserve the long shelf life of the products, stops the growth of bacteria and fungi. E 225 is a disinfectant, a sterilizing chemical additive to stop the maturation of wine. This substance slows down the oxidation and prolongs the shelf life of the products, decomposes when heated. The preservative is easily oxidized with potassium permanganate in an acidic medium. This speaks of good restorative properties. Upon interaction of E 225 with moist air or on contact with water, a two-molecular crystal hydrate is formed.
The food additive potassium sulphite is obtained chemically by reacting sulfur dioxide with potassium carbonate. Refers to additives with a medium degree of danger.
Potassium sulfite is widely used as an antioxidant and preservative in the food industry. It is added to vinegar, beer, wine, natural fruit juices, soft drinks. It is also found in potato products, dried fruits and many others with a long shelf life.
At high concentrations of E 225 in the body, an acute allergic reaction can occur in sensitive people. The supplement has a detrimental effect on the digestive organs, destroying vitamins B1 and B12, which are important for vital functions. Asthmatics should pay special attention to products containing preservatives, because they should not use them at all.
E 225 is banned in many countries and is not allowed for use in the food industry because the effects of potassium sulfite on the human body have not been fully studied.
