Potassium acetate is also found under the name potassium diacetate, it is a white and colorless crystals that have a weak alkaline taste and melt in the open. The crystals dissolve well in water, but are insoluble in ether.
E 261 is a preservative that prevents the growth of bacteria and fungi, it is also a sterilizing additive. Its source is acetic acid. Potassium acetate is as toxic as acetic acid.
Potassium acetate softens the overly acidic taste of acetic acid contained in various products. E 261 is used in the food industry and in pharmacology as an acidity regulator and as a preservative. Used in making red and fruit sauces, pickles, cheese. In pharmacology - is part of diuretics.
Potassium acetate has been identified as harmless, but there are some contraindications. Consumption of products containing it by people with diseases of the cardiovascular system, kidneys, urinary tract, liver and bile is not recommended. It is permissible for use in minor problems with the gastrointestinal tract, but with extreme caution. It should not be taken by people prone to allergic reactions.
Potassium acetate content is allowed in bakery products, canned fruits and vegetables. The use of the substance in baby foods is not allowed.
