Potassium citrate (potassium salt of citric acid) is a food additive that is used as an acidity regulator, emulsifier, stabilizer, color fixative, emulsifying salt. Represents crystals with white color and strongly expressed sour taste. Solubility: in water - good, in various alcohols - not good, and in other organic solvents - practically insoluble.
E 332 is widely used in the pharmaceutical industry, in the production of cosmetics, in the food industry to stabilize acidity and acid-base balance. Contained in jams, jellies, desserts to regulate acidity and texture. Potassium citrate is often added to milk powder, cream, beverages, seafood (fish, crabs, shrimp, mussels); It is also found in vegetable and animal fats and oils.
The additive is used in canned fruits and vegetables, meat products, minced meat, confectionery and pasta. The production of processed cheese is almost impossible without the use of E 332. It gives it an elastic and dense structure, a pleasant specific taste, prolongs the shelf life of the product.
It is approved for use in all countries around the world.
No adverse effects on human health and life were found. The safe daily dose varies from 2 to 40 grams per kilogram of body weight.
