E 351 is a white, crystalline, odorless powder. Under normal conditions it dissolves well in low temperature water and is insoluble in ethanol. In nature it is found in rowan berries, apples, raspberries (they contain malic acid). The supplement is a very important intermediate that is involved in the metabolism of cells in all living organisms. Potassium malate for industrial purposes is obtained from DL-malic acid. Impurities: maleic acid, fumarates.

Use

Acidity regulators are used in the food industry, mainly to protect products from rancidity, oxidation and discoloration. They are usually added to oil and fat emulsions (in particular mayonnaise). E 351 is found in jams, canned fruits, jellies, citrus marmalades. The supplement is rarely used in food. In theory, it can be used as a substitute for citrates.

Impact on humans

Although the results of studies show no obvious danger to the human body, potassium malate is not recommended for use in the preparation of baby food.

The food supplement E 351 is banned in some countries because it has not passed the necessary tests. In the EU countries it is used in the food industry. The maximum permissible safe daily dose for humans is not specified.
