Potassium salt of fumaric acid or potassium fumarate is a dietary supplement from the group of antioxidants.

Antioxidants are added to products to increase their resistance in order to prevent rancidity and oxidation. They can be obtained naturally or chemically.

The substance is a white powder with a sour taste, odorless and good solubility in water. E 366 is obtained by the reaction of fumaric acid and sodium hydroxide. The status of potassium fumarate has not been determined, it is subject to tests and research.

Use

The additive can be used as an acidity regulator (usually added to beverages, caramel, chewing gum, etc.). In the food industry it is used in the production of wine, in fillings and additives in bakery and confectionery products, in dry and jelly desserts, in instant tea products, in canned fruits and others.

Human effects:

Nutritional supplements affect health even in minimal amounts. Their action depends on the properties of both the substance and the organism. The effect is different in children and adults. Exceeding the permissible concentrations is harmful to humans. It is not recommended to consume a large amount of products containing food additives. For each of them there is a certain maximum allowable amount, which does not pose a danger to the body. For E 366 is 6 mg per kilogram of body weight.
