Ammonium alginate is a stabilizer that is used to preserve the consistency of the product and is able to increase its viscosity. E 403 is a granule or powder with a faint odor of ammonia. In its natural form it is part of alginic acid. It is separated from seaweed as kelp by treating it with ammonia solution.
