Pectin is a stabilizer that preserves the viscosity and consistency of food. It is obtained from citrus fruits, apples, beets. It has the properties of a moisture-retaining agent, a gelling agent and a thickener. Two types of pectins are used: soluble and insoluble. Soluble ones are found in plant sap and insoluble ones are found in cellulose. As the fruit ripens, during storage, insoluble pectin has the ability to become soluble.

Use

Pectin is an award-winning and popular supplement. It is approved for use in all countries around the world. It is widely used in the food industry and is used in the production of:

  • different types of candies;
  • confectionery and fruit fillings;
  • jelly products;
  • dairy products;
  • ice cream and desserts;
  • cooking fats and oils;
  • mayonnaise, ketchup, sauces;
  • sweet;
  • baby and diet foods;
  • capsules and shells in pharmacology;
