Ammonium phosphatides are stabilizing substances that preserve the viscosity and consistency of food. The additive has the structure of transparent crystals or white crystalline powder, the smell is of ammonia.

E 442 can be partially used as an emulsifier to facilitate the preparation of various emulsions.

Use

The substance is used as a leavening agent for mixtures and in the production of yeast. Used:

  • in the manufacture of paper, various fabrics, as an ingredient in the soldering of copper, bronze, zinc, lead;
  • as a mineral additive and acidity regulator;
  • as an aqueous solution to stimulate the production of malt and lactic acid;
  • as an improver in bread production and fruit making; and other.

Impact on humans

The maximum allowable daily dose of the supplement is 80 mg per 1 kg of body weight. Its use in baby and diet foods is prohibited. E 442 may cause allergic reactions and irritation of the mucous membranes.

Foods containing ammonium phosphatides should be avoided by people with stomach ailments and metabolic disorders.
