Glucono-delta-lactone, or internal ester of gluconic acid, belongs to the group of dietary supplements with wide application. Represents white crystals or crystalline powder without a specific odor. It is found in raisins and other dried fruits containing gluconic acid. It is synthesized by concentrating gluconic acid to 80%. E 575 is on the list of EU-approved food supplements. It has the ability to improve the appearance of products, prolongs their shelf life, is an acidity regulator.

Use

Glucono-delta-lactone is used as a thickener in the preparation of soy curd (makes it whiter and softer), as a gelling ingredient in the production of cheese and dairy products. It is widely used in meat production - it is added to sausages, frankfurters, rolls to give them the desired color. It also shortens the time for heat treatment, accelerates the ripening and coloring of sausages and natural semi-finished products, participates in imparting taste. In addition, it enhances the color, which reduces the need to use toxic substances, nitrites. In juices, jams, marmalades and fillings, the additive E 575 acts as an acidifier (regulates acidity). The substance preserves the freshness of fish and seafood for a longer time. Actively used in the preparation of dough for pizzas, breadcrumbs, biscuits, for faster salting of fish. It should be noted that during long-term storage of products, they change their taste due to the presence of the additive in their composition.

Glucono-delta-lactone is also used in pharmacology, cosmetics and chemical production.

Impact on humans

There is no set maximum allowable daily dose of the food supplement. It refers to substances safe for human health, is widely used in the food industry in all countries of the world, has a positive effect on the reduction of nitrites in the final product. There are no known cases in which E 575 has caused damage.
